A Brooklyn Pizza Pop Up Rivals The Borough’s Best

Many of the pizza pop-ups that proliferated during the pandemic have gone into hibernation (although some expanded into brick and mortar shops like Brooklyn DOP). But one that is still going strong is La Rose Pizza in Park Slope, Brooklyn — which has been serving up delectable, Instagram-worthy Detroit style pies over the past two years.

What’s Unique? Because La Rose is a pop up, details are subject to change without notice. However, typically the menu features seven pies, starting at $30 for a Plain Jane (Cheese Blend, Sauce, Pecorino, and Basil) and jumping up to $43 for a Lucia (Cheese Blend, Sauce, Pepperoni, Burrata, Pesto, Frankie 457 Chili Oil, Honey, Pecorino). Does that sound like a lot for a pie? Maybe… But these aren’t your average pies. They are hefty, ingredient-heavy, pieces of edible art. Two slices is all you need to feel full. Dinner for $10-$15/person doesn’t seem so bad, does it?

What To Eat? I ordered two pies from La Rose this spring — via Instagram DM (more details about that below): The Plain Jane and a Tom Green (Cheese Blend, Roasted Portobello, Caramelized Onion, Smoked Mozzarella, Ricotta, Pesto, Black Pepper, Lemon). Both were delicious and I definitely recommend trying a red sauce pie and a pie without sauce. The crust is crunchy, yet chewy and is thicker than many other Detroit style pies I’ve had. You can taste the quality of every ingredient in each bite and La Rose doesn’t skimp on any of the toppings either. On the Tom Green, for example, there appears to be a full ball of mozzarella. These are destination worthy pies — literally — since you’ll need to travel to South Slope to pick them up.

What To Know Before You Go? Securing a pie from La Rose is not for the faint of heart. For starters, currently pies are only made one day each month. And orders typically open up about a month beforehand and sell out within a few minutes. You can only place orders by sending a direct message to @larosepizza on Instagram and orders are only confirmed upon receiving a message back. So, for example, I placed my order on February 26th @ 9AM for pick up on March 31st at 6:30PM. If this sounds complicated… it is. But the easiest strategy is to follow @larosepizza on Instagram and keep an eye out for when orders are opening. If you’re fortunate enough to snag one of these pies, you won’t regret it.
